Pasta al forno con finocchio e melanzane – Baked pasta with fennel and eggplant

INGREDIENTI:
250 gr di ziti
1 finocchio
1 melanzana
1 grossa manciata di prezzemolo fresco
1 spicchio d’aglio
1 provola affumicata piccola
1/2 bicchiere di besciamelle
100 gr di parmigiano grattugiato
pangrattato
sale
pepe
1 filo di olio extra vergine di oliva

PREPARAZIONE:
Taglia a dadini la melanzana e il finocchio e trita grossolanamente il prezzemolo. In una padella fa soffriggere l’aglio tritato e dopo un paio di minuti aggiungi melanzana, finocchio e prezzemolo. Cuoci il tutto per una decina di minuti, mescolando di tanto in tanto e aggiungendo un po’ d’acqua se necessario. Aggiusta di sale e pepe. Cuoci la pasta a parte e scolala al dente. Dopodiché mescola insieme la pasta, le verdure, la besciamelle, il parmigiano, la provola tagliata a dadini e versa il tutto in una teglia imburrata. Ricopri con del pangrattato e cuoci in forno preriscaldato a 220°C per 15 minuti. Alla fine cuoci per altri 3/5 minuti, al massimo della temperatura, accendendo solo il gril superiore per far gratinare la superficie.

1 large handful of fresh parsley
1 clove of garlic
1 small smoked provolone cheese
1/2 cup of besciamelle sauce
100 g of grated Parmesan cheese
breadcrumbs
salt
pepper
1 drizzle of extra virgin olive oil

PREPARATION:
Dice the eggplant and the fennel and coarsely chop the parsley. In a pan fry the minced garlic with a drizzle of extra virgin olive oil and after a couple of minutes add eggplant, fennel and parsley. Cook everything for about ten minutes, stirring occasionally and adding a little bit of water if necessary. Season with salt and pepper. Cook the pasta in salted boiling water and drain it “al dente”. Then mix together the pasta, the vegetables, the besciamelle sauce, the parmesan, the diced provolone cheese, and pour the mixture into a buttered baking dish. Cover with bread crumbs and bake in preheated oven at 220°C for 15 minutes. In the end cook for another 3/5 minutes, at the oven’s maximum temperature, turning on only the upper grill to brow the surface.
